Whatever Happened to My Transylvania Twist?


I'm dreaming of a white Halloween, just like the one's I used to know.....  Wait, WTF - it's snowin' and this is DC in October not 'effin Montana!  Oh well,

A Spooktacularly Fun and Easy Treat!

Pumpkin Mousse:
1 15z Can of Pumpkin Pie Filling
3 Cups of Heavy Cream
3/4 Cup of Granulated Sugar (note:  I like working with turbanado sugar but it may not work well here)
1 tbs vanilla extract (pure)
1/4 tsp pumpkin pie spice
1/4 tsp ginger
1/4 tsp cinnamon (if desired)
1/2 tbs honey (if desired)
1 pinch of allspice
1 pinch of ground clove
Ginger snaps (for garnish)

*  Combine pumpkin pie filling, 1 cup of heavy cream, sugar, and spices in medium sauce pan and simmer over medium heat for 5 minutes.  Make sure filling, spices, and cream are completely incorporated into mix before it comes to simmer.  Stir gently while simmering (make sure bottom and sides do not burn).
*  Remove from heat and cool completely (until between 40-45 degrees)


*  Whip remaining heavy cream and vanilla on high until fluffy
*  Fold whipped cream into cooled pumpkin mixture
*  Serve in chocolate cup or carved out mini-pumpkin with crumbled ginger snaps as a under-crust or sprinkled on top.

And yes, what you see above is as close as I'm getting to an HNT.  Just call it Ryan's HCS!

LOL! Yeah, all that snow -- in October. Glad it's melted, now. Your pumpkin mousse sounds really delicious. Umm... What is HCS? Half Covered Shot? And why are you wearing gloves? Do you always wear rubbers? Happy Halloween!
